Just don’t worry and make a fuss about it and brush it off by saying “hmmm… I guess it’s your turn to do something silly now, you’re welcome to do it anytime for the next 30 minutes”. Just make light of the situation and pretend like nothing happened and wipe the coffee away. Do not make a fuss over what just happened. If you don’t she won’t either!

This depends on what kind of personality the girl has, you can either just make fun of her situation.
